Apricot paste blended with ice and water.
A well-known juice throughout the region and particularly in Egypt. It is commonly served at special occasions and during Ramadan.
Cut the apricot sheets to medium size and soak in the water for 1 hour or until the paste is soft. Transfer to a blender and blend the mixture with the ice cubes into a thick smoothie consistency, then serve.
Add 1 to 2 tablespoons of sugar, or any natural sweetener, to taste.
Apricot sheets can be found at specialist eastern Mediterranean food stores.
